My Healthy Pancakes

A huge lesson I have learned in the past six months has been that eating healthy does not mean I have to eat a piece of lettuce for every meal. What I have found with most meals that are considered "unhealthy" is that there are so many alternative ways to make foods that I am craving. 

As a kid, I would wake up to the smell of delicious pancakes waiting for me downstairs (yes, my mom is an angel!). They were not just any pancakes though; the pancakes always had chocolate chips throughout. Obviously, I will never stop craving these pancakes that my mom spoiled me with almost every day, but my body is not as forgiving as it was when I was thirteen! So, I took matters into my own hands and after testing different recipes, I have found the perfect alternative to my mom's fluffy pancakes (And this healthy twist is easier than you may think)! 
INGREDIENTS: 
1 Banana (however ripe you like it)
1 Egg (or egg replacement)
1/2 Cup of quick oats
1 Teaspoon of cinnamon
1 Teaspoon of chia seeds
1 Tablespoon of agave 
Splash of vanilla extract 
Sprinkle of chocolate chips

HOW TO PREPARE:
Start by mashing the banana with a fork (or your tool of choice), next add the egg and the quick oats. Let the mixture sit for about ten minutes in the fridge for the oats to absorb the moisture. Then, add in the rest of the ingredients except the chocolate chips (saving the best for last, of course!). Lastly, pour the batter into a hot pan that has been sprayed with oil (I keep mine on medium heat) and sprinkle chocolate chips on top, then flip. Notice I made mine smaller so they are easy to flip! I find it best to add more chia seeds and cinnamon on top, but also drizzle creamy almond butter! 

This is one of my favorite breakfast recipes! Don't be afraid to alter my recipe to make it your own...I am not claiming to have mastered it yet by any means! ENJOY.
